Meat That MattersEvidence clearly indicates that goat meat can supply high protein, increased unsaturated fat and decreased saturated fat which can result in a reduced cholesterol level. Adding this highly palatable alternative red meat to a diet contributes to the healthy lifestyle we all want and deserve. After serious medical problems a few years ago, it became a must to totally change our eating habits and look for a different perspective on how to accomplish this. We were very fortunate in that we could raise our meat here on the ranch for we had been doing so for many years. However, instead of beef we started to eat more venison and "chevon". We learned very quickly that goats needed to be fed differently than the cattle we had fed out for so many years. We just needed to trim the fat and bring to the table an entre that "tasted good". We finally came up with the "correct answer" and from this experiment has grown the product T4 Ranch Chevon Summer Sausage with Jalapeños and Cheddar Cheese It is 100% Chevon with no added pork, beef or any other meat. The meat has been mesquite smoked and therefore fully cooked so that the product comes to you ready to eat.
We have given away a lot of sausage in taste tests and to our "friends and enemies" and have never had a negative response.
This new product is endorsed by the Texas Department of Agriculture and carries their "GO TEXAS" symbol. It is USDA inspected and approved and distributed only by T4 Ranch.
